Homemade lemonade can be used with other ingredients as a base for ‘Mocktails.’  Serve it with thinly sliced fruits and ginger ale for a sparkling drink. Use lemon zesters to make decorative slivers of lemon to decorate the drinks.

Recipe Science

Cooks Know How:  Fruits such as lemons, limes, oranges and grapefruit are known as citrus fruits because of their acidic tangy flavour. Use your knife to slice the lemons making thin, peel and flesh circles. Poach the lemons gently with the lid on.  Poaching the lemon with sugar takes away the sour flavour but retains the tang from the essential oils trapped in the peel of the fruit.  Sieve to remove the fruits and retain the juice. Some vitamin C is lost during the cooking but some remains making a healthy fruit drink, free from additives.   Chill in the refrigerator once the juice has cooled.  Serve the resulting lemonade over ice.
