Prep to Cook: Zester, pan of microwave jug, basin, tablespoon. wooden spoon
Prep: 1. Prep the fruit:
Prepare the citrus fruits by grating the zest from both with fine grater
Squeeze the juice from the fruit
2. Prep the sauce:
Heating the juice and zest and water in a pan or in the microwave
Stir in the sugar, soft brown and icing and stir until melted
In a basin blend the cornflour with a little cold water until it is smooth
Pour into the pan and stir to thicken the juice
Keep stirring until the sauce re-boils
Stir and taste
Serve warm not hot
Lemon and lime drizzle sauce is tangy, citric and sweet so it works well served with dessert cakes. You cannot buy any other sauce that has this exciting taste.
This sauce goes well with cake puddings such as Golden date dessert. It can be made well in advance and stored in the refrigerator. Serve it warm even with ice-cream.
Cooks Know How: You will be amazed how zesting the lemon and lime makes the whole room fragrant with citrus. You will see how cornflour blends with cold water quite easily and has no lumps. This would not be true for wheat flour. You will recognise the way the cornflour thickens as the water reaches boiling and the sauce turns fairly clear. The sugar acts as a sweetener and you will use your own tasting skills to adjust the amount of sugar.
