4 – 6 thin uncooked sausages2 cloves garlicJuice of half a lemonHalf tsp paprika spiceHalf tsp ground cuminThird of a bunch of fresh corianderI fresh red pepper
4 – 6 thin uncooked sausages
2 cloves garlic
Juice of half a lemon
Half tsp paprika spice
Half tsp ground cumin
Third of a bunch of fresh coriander
I fresh red pepper
Prep to Cook: Chopping board, veg knife, cocktail sticks, ingredients, cooking dish, basin
Prep:
1. Prep the sausages:
Press the sausages in the middle and twist
Cut the sausages into mini sausages
2. Prep the marinade:
(a marinade is a juicy mix that adds flavour to the sausages)
In a basin mix lemon juice, paprika and cumin
Add diced fresh coriander
Grate the garlic and add
3. Prep the combo:
Mix the marinade with the sausages
Allow to stand for 10 mins ( do not skimp on this – in fact you could leave them for longer – an hour in the refrigerator)
4. Prep the sticks:
Chop the stalk end off the red pepper
Chop the other end and push fingers into the cavity and pull out the seeds
Cut into two and stack the pepper pieces so that you can quickly chop the pieces poertion about 1 centimeter by 2 centimetres
Use the drained cocktail sticks to skewer a portion of red pepper followed by a sausage and finally another piece of red pepper
5. Prep to cook:
Cook for 15 – 20 minutes in the oven at 190ºC or Gas 5 or the grill n microwave if you wish 7 mins
Look for the sausages have golden brown tinges all over
If they are pale leave them in the oven for longer
Sausages need to be well cooked
Cool and serve
Or store in fridge until required
These will keep for 2 days and therefore you can make them in advance
