Apple Banana and Almond cake

Ingredients / Shopping List

150g SR Flour

50g ground almonds

2 eating apples

1 banana

2 eggs

100g margarine

100g caster sugar

Juice half a lemon

1 tblsp Demerara sugar

Prep to Cook:  Food mixer, mixing bowl, spatula, veg knife and chopping board, lemon squeezer, fork.  Oven on 190ºC Gas Mark 5, 20cm square cake tin or similar

Prep: Peel away some of the apple skin, core and thinly slice the apple

Cream the margarine and caster sugar

Beat in the eggs and add mashed banana

Stir in ground almonds and chop about half the apples into cubes

Add these to the cake mixture

Tip into the greased cooking tray and spread out the cake

Push the apple slices into the top of the cake mix in rows

Sprinkle with the Demerara sugar

Bake for about 25 minutes at 190ºC or Gas mark 5

The cake should be golden brown 

Allow to cool and slice into bars or squares

This a moist cake that is good cold and also warm with some custard or cream.  This is a good way to include more fruit in your diet without noticing.  Almonds provide a good source of calcium and iron.

Cooks Know How: Creaming together the fat and sugar incorporates air into the mixture.  This air creates the lightness when the cake mixture is cooked. Eggs enrich the cake with iron from the yolk and protein at the same time as helping to trap more air.  Once those ingredients have been beaten, either by hand or using the electric mixer, the rest of the ingredients can be stirred in.  Self Raising flour will add further raising agents so your cake will be light.  The apples pack this cake with fruit whilst the banana and almonds add energy. As you bake this cake the fats melt, the sugar dissolves and the eggs set.  The cake becomes firm and the crust turns golden.  The Demerara sugar crystals sprinkled on top add that extra crunch and completes the cake.  No further icing or decoration is required.  The almonds help the cake to keep moist and therefore this cake can be made in advance but is best popped into the oven to warm it through.
