Prep to Cook: Oven electric 180ºC Gas Mark 4, food mixer, basin, wooden spoon, 2 metal spoons, sieve, bun tray, 12 paper cases, pastry brush, measuring jug
Prep: Put margarine, caster sugar and eggs in the food processor
Blend on high speed for 30 seconds
Sift SR flour with 1 tsp baking powder and fold into the cake mix
Melt the chocolate over a bowl of hot water
Add quickly to the cake mix and stir well, leaving the marble effect that occurs
Divide into 12 baking cases in a bun tray
Cook for 17 – 20 minutes until well risen and golden and bouncy to touch
Prep the icing:
Blend half a teaspoon coffee powder in 2 tsp of boiling water
Add the icing sugar and further 2 teaspoons water with a knob of butter added to melt it Mix thoroughly, the icing should be quite runny
Remove the cakes from the oven and cool
Using a pastry brush dipped into boiling water scoop some of the icing
Paint over the top of the cakes making sure you get an even covering all over the peak
Dip again into boiling water and dab the top of the cake
Sprinkle with toasted almonds and leave to set
