Ingredients / Shopping List

150g SR Flour
1 tsp baking powder
100g milk or plain chocolate
150g soft marg
150g caster sugar
3 eggs
Icing 250g natural icing sugar
1 tsp instant coffee
Boiling water with small knob of butter
25g Toasted almonds to decorate

Prep to Cook: Oven electric 180 Gas Mark 4, food mixer, basin, wooden spoon, 2 metal spoons, sieve, bun tray, 12 paper cases, pastry brush, measuring jug

Prep:

  • Put margarine, caster sugar and eggs in the food processor
  • Blend on high speed for 30 seconds ( or use hand-held mixer in mixing bowl)
  • Sift SR flour with 1 tsp baking powder and fold into the cake mix
  • Melt the chocolate over a bowl of hot water
  • Add quickly to the cake mix and stir well, leaving the marble effect that occurs
  • Divide into 12 baking cases in a bun tray
  • Cook for 17 – 20 minutes until well risen and golden and bouncy to touch

Prep the icing:

  • Blend half a teaspoon coffee powder in 2 tsp of boiling water
  • Add the icing sugar and further 2 teaspoons water with a knob of butter added to melt it Mix thoroughly, the icing should be quite runny
  • Remove the cakes from the oven and cool
  • Using a pastry brush dipped into boiling water scoop some of the icing
  • Paint over the top of the cakes making sure you get an even covering all over the peak
  • Dip again into boiling water and dab the top of the cake
  • Sprinkle with toasted almonds and leave to set

Cooks Know How: Making a cake mix quickly in a food processor can means using a chemical, baking powder to boost the cake and make it rise. In this recipe the margarine, sugar and eggs are mixed to form the wet sloppy mixture. The dry flour and extra raising agent is then added  alongside the warm melted chocolate.  The melted chocolate could make the cake a bit dense and close textured, but with the baking powder addition the result is light.  This is almost and All-in-one cake but not quite!

Cake can be made using the all-in-one method, quick mix, rubbed in, creamed, melted method or whisked technique.  Every method aims for light texture and good eating quality. Cooking in paper cases portions the cake for individuals and speeds up the cooking time.

Cake supplies energy and calories in the diet.  The inclusion of eggs provides some proteins and a little iron.  Cocoa in dark plain chocolate also supplied a little iron. Almonds supply some calcium and iron.

Next Time

Add orange zest to the cake.

Use walnuts or desiccated coconut instead of the flaked almonds.
