2 skinless chicken breasts
2 cloves garlic
1 birds eye chilli
2 tablespoon natural yoghurt
Pkt wooden kebab skewers
Prep to Cook: Kebab sticks, chopping board, sharp knife, garlic grater, basin, tablespoon, sheet foil
Grill: High heat
Prep: Firstly soak the kebab sticks in water whilst you prep the other ingredients.
Cut each chicken breast into 7 or 8 chunks and put in basin
Zest about half the lemon and put this over the chicken
Cut the lemon in half and squeeze the juice, pour over chicken
Peel the garlic cloves, then grate, or chop finely.
Slice the birds eye chilli (with care) and remove seeds.
Chop it very, very finely and add to the basin along with the garlic.
Stir well and leave this to stand in the refrigerator for 10 mins.
Heat the grill and line a grill pan with foil ( makes clearing up easier)
Take chicken from fridge and stir in 2 tablespoons natural yoghurt and mix well.
Skewer 3 chunks of chicken onto each stick from about half way down to the tip, scooping the yoghurt mixture on well.
Lay on grill pan and cook turning after 5 - 6 minutes.
3 turns should ensure all the chicken has been cooked.
Serve with tomato salsa, green salad and hot bread.
Make your chicken go further by skewering it up and bringing out the flavour. You can cook these on a BBQ or simply use your grill.
Chicken is a low fat meat that takes on flavour easily from the other ingredients.
Cooks Know How: Grilling is a hot and fast method of cooking but you must be sure the chicken is properly cooked through. Turning the chick sticks helps the heat to penetrate and then you are sure it is cooked. Lemon and yoghurt marinate both help to make the meat more tender because they are acid and of course the chilli and garlic adds flavour. Charring whilst cooking also helps to give these chick sticks a summery flavour. Cover the handle end of the chick sticks with a layer of foil whilst grilling to prevent them burning.
Chick sticks can be served over a rice and spicy vegetable mixture as a hot meal. They can be prepared in advance, leave the chicken in the marinade overnight if you like.
You can change the meat and use lean pork loin cut into chunks in the same way.
